Sugar Spiced Salmon
Main Dish
4 each 6 oz salmon filets
2 bunches red swiss chard, washed, stem removed and chopped
1-2 each roma tomatoes julienne
1 each corn kernel preferably barbequed then husked
½ each red onion julienne
2 cloves garlic minced
¼ cup white wine
Spice Crust for Salmon
2 oz granulated sugar
2 oz chili powder
1 oz kosher salt
2 tsp cracked black pepper
1 tsp ground cumin
½ tsp cocoa powder
½ tsp ground mustard
¼ tsp ground cinnamon
Chinese Hot Mustard
1 cup ground yellow mustard
1 cup granulated sugar
Hot water as needed
Serves 4 People
Prepare all ingredients ahead of time, this recipe is quick and easy.
Dust salmon filets in spice mixture, place on greased cookie sheet or in greased oven proof sauté pan.
Bake at 350 degrees for 10 minutes or until salmon is cooked, salmon will just start to release its natural fat when cooked just right.
In a medium sized sauté pan on medium-high heat. Add oil and sauté onions briefly to sweat, add corn, tomatoes and cook for 1 more minute. Add garlic and chard, sauté briefly then add white wine to steam. Season with salt and pepper.
Place a mound of the greens on a plate and top with salmon filet. Drizzle sauce over fish and serve.
